The Restaurant Dilemma: Why You Should Bring Your Own Knife

Let's explore the usage of steak knives in restaurants and the nuances every diner should know before their next meal.

My name is Frederic Camboulives. My wife Aggie and I are the owners of Laguiole Imports, a "niche" business we started as a hobby 20 years ago. While the story of how we became a flagship for Laguiole is for another day, our passion for quality cutlery is at the heart of everything we do.

Recently, I took Aggie and our two children, Mila and Maxim, to III Forks Steakhouse in Jacksonville, Florida. It is hands down our favorite steakhouse in town! Celebrating Aggie's birthday, there was something special, especially since it was our first visit back in over a year and a half.

Aggie and I typically bring our own folding knives to restaurants, particularly when we know we'll be enjoying a world-class steak. Unfortunately, being out of practice, we forgot our beloved 12 cm and 13 cm Laguiole folding knives. We were forced to use the "steak knives" provided by the house.

Despite the impeccable service and my delicious $68 ribeye, there was a problem: the knife. The steaks were served with a heavy-duty, 8 oz knife with massive serrated teeth. Why would a chef serve an exquisite, tender piece of culinary art with what is essentially a saw?

From a restaurant's perspective, it makes sense: these knives are inexpensive, dishwasher safe, and nearly indestructible. Most importantly for them, they are low liability. But sawing through a premium steak ruins the intended experience. A serrated edge tears the fibers of the meat, whereas a sharp, straight blade glides through effortlessly, preserving the juices and the texture.

Bringing your own folding knife ensures a clean, pristine cut every time. It’s your tool, it’s sharp, and it hasn’t passed through thousands of hands. Just as restaurants allow you to bring a bottle of wine for a corkage fee, bringing your own knife completes the connoisseur experience.

My Recommendations:

  • Laguiole Folding Knives: Specifically, the 12 cm or 13 cm handles. These are the most elegant folders in the world and are at home in any upscale establishment.
  • Subtle Folders: Any quality knife with a 3 ¼" to 3 ¾" blade that looks like a tool of a connoisseur rather than a weapon.
