Named after the village of Yssingeaux (translation from local dialect = five cockerels), this knife honors the Gallic Rooster, the unofficial national bird of France. Things to Look For
The file work on the springs (top of handle) are individually hand filled by a French artisan, therefore all are different. Additionally, two handles made from the same material can have very different patterns.
You need to know
Horn Tip from domestic cattle. The tip of the horn is the hardest and most durable, Inferior horn handles are made from the bottom of the horn which will warp with time.
