The Yssingeaux (pronounced "e seɪn jo") is named after its birthplace of "Yssingeaux" a village in the Auvergne-Rhône-Alpes region of France. The version of the knife you see today was baptized Yssingeaux around 1920 but was also found in slightly different formats since the late 1800s under the name ""Issoire", "Bourbonnais (1890)", "Façon Chabrol (1908)" and "Le Basque (1912)". Today, Fontenille Pataud also offers a slightly more contemporary version of this knife that features a lock back system named "5 Coqs".
